2 months recapitulation

Ok, I have been on a low carb diet for two months now. It is time to do a little recap. 

I lost 7 kg (15lb), which is not so much. Honestly, I expected little more regarding the fact that I lost most of it during the first two weeks and than I just went up and down, up and down… Last month it was really slow and the consequences of my cheat day have been hard to repair. In the beginning, it took me around 2 days to get to the weight which I had right before the cheat day. Now, there are weeks when I got the that weight right before the next cheat day, so I did not loose anything.

On the other hand, I feel great. Despite the small progress, I feel that I got use to living on a low carb diet and it doesn’t seem so hard any more. I do not have cravings,  I can enjoy beans much more and I learn how to cook. I think that I am taking it positively. I am loosing my weight, no matter how slowly, but what is most important, I am changing my life style.

Also, I must say that I am cheating sometimes. No cheating like McDonald cheating, but when I was sick, I ate a chicken soup with a noodles or when I was sad, I took a one bite into a dark chocolate. Stuff like that. I think, when it is not becoming something regular and I still feel the need to stay on my diet, it is OK. I am not a robot and I want my lifestyle to be human friendly :)

Low carb cookies.. I would tell you my recipe but I do not know myself. I just put together almond flour, splenda, egg, cinamon and 85% chocolate. I mixed it and put into oven for few minutes. It tasted really good :)

Chicken-cheese-walnuts salad

Ingredients:

  • Chicken brests 
  • Brie or camembert or any other soft cheese
  • Walnuts
  • Mix of salad leaves
  • olive oil, herbs, pepper, salt 

How to proceed:

  1. Cut cheese to small pieces and put it on aluminum foil
  2. Cover cheese with walnuts, pepper and herbs (or grill spices, which I would have used if I had it)
  3. Put it into the pre-heated oven for 10 minutes
  4. Meanwhile roast cut chicken brests in the pan with a bit of oil 
  5. Prepare salads leaves into the bowl
  6. When the chicken is ready, put it on the top of the leaves and cover it with the cheese with walnuts
  7. Put few drops of olive oil and herbs on your salad and eat it!
